A rose preserve with a purpose
Gulkand is a sweet rose-petal preserve, familiar to generations of paan lovers. In our recipe, it forms the soft, fragrant centre. Its rose character sits alongside the green flavour of betel leaves, while its texture holds the small pieces of the blend together.
Letting sunlight do its work
We use sun-cooked gulkand made with Damask rose petals and dhaga mishri in place of granulated sugar. Sun-cooking belongs to the traditional story of this preserve: petals and sweetness come together over time. We keep our gulkand out of the pot-roasting step.
Where the blend comes together
Our sorted, finely chopped Banarasi betel leaves are mixed with the gulkand. The pot-roasted ingredients bring texture and aroma, while unroasted mint flavour adds its fresh finishing note. Gulkand gives these different characters a shared, rose-scented base.
A little ingredient knowledge
Dhaga mishri is a form of rock sugar. Choosing it instead of granulated sugar describes how our gulkand is made; the preserve still contains sugar.
