# Dry Dates

Small-cut dates, made to mingle with every mouthful.

Dry dates bring a fruit note and a firmer texture to our Meetha Paan. We cut them into small pieces so they become part of the blend, alongside the finely chopped leaves, seeds and soft rose preserve.

- Cut into small pieces
- Part of our pot-roasted blend

## A fruit note among the leaves and seeds

Dry dates add a different character from gulkand's rose sweetness. Their fruit flavour and firm texture sit comfortably among the aromatic leaves and seeds. They help make the recipe feel like a blend of distinct ingredients, each with something to contribute.

## Why the size of the cut matters

We cut the dry dates into small pieces before blending. Large pieces would stand apart; small pieces can mingle with the finely chopped betel leaves and gulkand. The preparation lets the date texture appear throughout a portion rather than in an occasional large bite.

## Roasted, then brought into the blend

The dry dates belong to our pot-roasted ingredients. They come together with the leaves, fennel and watermelon seeds, while gulkand and mint are kept out of roasting. The finished blend carries both that preparation and the small-cut texture.

## A little ingredient knowledge

Dry dates have a firmer, drier texture than soft dates. Cutting them small is part of our preparation, not simply a different way of naming the fruit.
