# Meetha Paan Ingredients Explained: What’s Inside Every Pack

## Gulkand: the sweet, floral heart

Gulkand is a rose-petal preserve. India’s ICAR–Central Institute of Post-Harvest Engineering and Technology describes traditional gulkand as rose petals sun-cooked with candy sugar and cured over a long period, a different process from quick-cooked rose jam ([ICAR-CIPHET](https://ciphet.res.in/rose-petal-jam-2/)).

## Banarasi betel leaves: the paan in Meetha Paan

Without the leaf, it would just be a sweet. We use Banarasi betel leaves, the variety from the Varanasi region that received a Geographical Indication (GI) tag in 2023 ([Business Today](https://www.businesstoday.in/industry/agriculture/story/banarasi-langda-mango-banarasi-paan-are-latest-entrants-to-gi-tag-club-375981-2023-04-04)). The leaves are sorted, finely chopped and pot-roasted before they are mixed with the Gulkand, so every spoonful carries the familiar paan flavour.

A common mix-up: betel leaf and “betel nut” are different things. The leaf comes from the Piper betle vine; the nut is areca nut (supari), the seed of the areca palm.

## The seeds: fennel, dhana dal and watermelon

[Fennel seeds](https://meethapaan.shop/ingredients/fennel-seeds) (saunf) are India’s best-known after-meal spice. Spices Board India notes that fennel seeds are used as a masticatory, something chewed after food, and to flavour confectionery ([Spices Board India](https://www.indianspices.com/spice-catalog/fennel.html)).

[Dhana dal](https://meethapaan.shop/ingredients/dhana-dal) is coriander seed (Coriandrum sativum) that has been split and roasted; the Spices Board notes coriander seeds are widely used with or without roasting ([Spices Board India](https://www.indianspices.com/spice-catalog/coriander.html)). It adds a toasty crunch familiar from mukhwas. [Watermelon seeds](https://meethapaan.shop/ingredients/watermelon-seeds) bring a softer bite between the leaves and dates.

## Dry dates, kadi supari and cow ghee

[Dry dates](https://meethapaan.shop/ingredients/dry-dates) (chhuhara) are cut into small pieces so they become part of the blend rather than chunks. [Kadi supari](https://meethapaan.shop/ingredients/kadi-supari) is thin-cut areca nut, one of paan’s oldest companions; it adds a light crunch. If you avoid supari, please note that it is part of this recipe. [Cow ghee](https://meethapaan.shop/ingredients/cow-ghee) rounds everything off with a gentle richness and means the product contains dairy.

## Mint flavour: the fresh finish

Mint is added as mint flavour, a fine white powder, not as fresh leaves. It is kept out of the roasting step and gives the sweet blend a clean, cool finish, which is why Meetha Paan works so well as an after-meal mouth freshener.

## How the blend is made

1. Gulkand is prepared by sun-cooking Damask rose petals with dhaga mishri.
2. Banarasi betel leaves are sorted and finely chopped.
3. The leaves, seeds and small-cut dry dates are pot-roasted.
4. Everything is mixed with the Gulkand; the mint flavour is added without roasting.
5. The blend is hygienically packed into jars and single-serve portions.
